Baby Quilt

Today I am doing more work on a baby quilt for my new granddaughter. It is going to take longer than I thought it would.  I’m not sure why I seem to end up having problems and delays especially when I am working within a certain  time frame.  I’m disappointed because I don’t think i will have it finished by Saturday when my son is bringing Carissa to meet me for the first time.  It seems that I forgot a couple of steps which will take extra time that I don’t have.

I think I’d better get back to work now.  I will post a picture when the quilt is completed.

Pineapple Upside Down Cake

Today I was feeling a little low.  I decided to make a Pineapple Upside Down Cake using my Mom's recipe and her cast iron fry pan that she used to make it in.  I have not made this cake in years and I have never made it in my Mom's pan.


I was amazed at how close this cake made me feel to my Mom who has been gone now for about 6 years now.  I would never thought of cake as a comfort food but I guess this one is for me.


I forgot to get a picture of the cake before it was cut up.  You can take my word for it that it looked great, smelled even better and tasted fantastic.


I'm just praising the Lord for the mother that I had and for all the love that we shared with each other.

FOR TODAY
Outside my window... the sun is shinning brightly

I am thinking...about what I want to do today

I am thankful for...my Service Dog, Dian who helps me in so many ways

From the kitchen...dirty dishes lay waiting for me to wash

I am wearing...blue jean skirt, red top and grey hoodie

I am creating...baby quilt for Carissa my new granddaughter

I am going...no where as I have not got a van  yet and so am housebound

I am reading...The Blessing

I am hoping...the poain eases of in my knees soon

I am hearing...horrible music coming from the local radio station.  I must shut it off and listen to the quiet of the day.

Around the house...lay treasures from times gone by

One of my favorite things...my flute which I dedicated to the Lord and use to praise Him

A few plans for the rest of the week... work on tidying up the house and some reorganizing of cupboards

I'm a Grandmother !!!

I'm so excited today.  My first grandchild was born early this morning.  Mom, dad and baby and doing just fine. I just can't stop bouncing up and down in excitement.

Carrot Muffins

Well my menu plan didn't work well today.  I did not feel like cooking and so did not cook dinner.  Simply had a bowl of cereal.

I was supposed to make muffins yesterday and they didn't get made until this morning.  I really enjoy these Carrot Muffins.  I had quadrupled the recipe and left some batter in the fridge to make just a few fresh muffins at a time.  Works great for me as I live here alone.


Carrot Muffins

·        1/2 cup whole wheat flour
·        1/4 cup packed brown sugar
·        1/2 teaspoon ground cinnamon
·        1/2 teaspoon baking powder
·        1/4 teaspoon baking soda
·        1/4 teaspoon salt
·        1/4 cup butter
·        2 tablespoons orange juice
·        1 egg
·        3/4 cup grated carrots
·        1/4 cup raisins
·         
·        In large bowl combine the flour, brown sugar, cinnamon, baking powder, baking soda and salt. In a small bowl, beat the butter, orange juice and egg on medium speed for 1 minute (mixture will not be smooth). Stir into dry ingredients just until blended. Fold in carrots and raisins.
Fill 6 muffin tins half full. Bake at 350° for 20-25 minutes.
